
2005 Elmslie Cabernet Sauvignon
TASTING NOTES - Our 2005 Cabernet Sauvignon is fine and ripe with savoury aspects and gentle tannins supported by clear cut varietal fruit and a clean finish.
WINE MAKER NOTES – Made from “Elmslie” fruit. Awesome quality. Fruit was crushed then placed into stainless steel tanks, left to soak for 2 days, plunging 3 times a day. Then pumped over and plunged 3 times a day for the next 14 days and fermented. Pressed every 2 hours then put into French Oak barrels. Full MLF, then left on lees. Aromatics and palate checked before egg fining and filtering for bottling.
VINTAGE CONDITIONS- 2005 was a great vintage with long warm days and minimal disease pressure. The grapes were perfectly ripe and of exceptional quality when hand-picked from “Elmslie’s” well protected western slopes. Picked in the first week of May, 2005 produced higher than average yields of cabernet sauvignon.
SERVING SUGGESTIONS –
The 2005 cabernet sauvignon matches perfectly with any beef dish, but especially enhances the simple pleasure of eating a tender, well cooked eye fillet. It is also a great companion for venison, smoked meats or a strong, Tasmanian blue cheese such as Ashgrove’s Mr Bennett.
